From Compost di Vino comes warmth

At the historic Leisenhof estate, Castel Sallegg sets a unique example of living sustainability: a bioreactor transforms vineyard prunings into heat for the Vineria and boutique hotel – and into valuable compost that returns to the vines.

Taking responsibility – energy from nature

Preserving what exists. Encouraging what is possible. This principle has guided Castel Sallegg from the very beginning. The vineyards and historic estates in Kaltern are both a gift and a responsibility.

For us, sustainability means thinking beyond today. Since 2022, we have bottled all our wines exclusively in 100% recycled glass. And at the Leisenhof, home to our Vineria and boutique hotel, we have taken a step that is unique in South Tyrol: the use of compost heat through a bioreactor.

The principle is both simple and forward-looking. Woody prunings and organic residues from the vineyards – such as grape stems – are composted inside the reactor. This process generates heat: silent, emission-free, and independent of weather and season. The energy flows into the Vineria and boutique hotel, heating rooms, pool and sauna. What remains is valuable compost that returns to the vineyards, completing the natural cycle.

Developed as part of the Compost di Vino project, the bioreactor is a pilot initiative that bridges research and practice. For Castel Sallegg, it represents yet another expression of lived responsibility. For us, sustainability is not a formula but a mindset – tangible in every detail, every stay, and every glass of wine.
