It all began with a simple question: what if wine could offer not only pleasure, but warmth?
From this idea, a truly unique project took shape at the historic Leisenhof in Kaltern: the Bioreactor Compost di Vino. It transforms the woody remnants of the vines into energy and compost, closing the circle between vineyard, cellar and hospitality. For guests, it means warmth from our own vines, comfort from natural resources and a stay that unites awareness with pleasure. Those who stay at the hotel or visit the Vineria experience sustainability not as a concept, but as a way of being – genuine, tangible, and true.
At the Hotel 2025 fair in Bolzano, Castel Sallegg received the Hotel Sustainability Award in the Better Together category.
This is where research meets tradition: in collaboration with Biologik Systems, Eurac Research, the Free University of Bozen-Bolzano, Laimburg and the South Tyrolean Farmers’ Association, a system was developed that provides heat for the Vineria and the Castel Sallegg Suites using energy from the estate’s own vines, while enriching the soil at the same time. The jury honoured Castel Sallegg as an example of how sustainability can be brought to life in the hospitality world. The harmony of research, winemaking and hospitality creates at Leisenhof a place where innovation and tradition intertwine – a model showing that responsibility and elegance can go hand in hand.
