Alto Adige Cabernet Sauvignon Riserva, DOC

Dark ruby red, berry aromas, with a touch of pepper, multilayered, elegant, and an intense finish.

Our Cabernet Sauvignon Riserva matures patiently and is well-suited for extended ageing. The vines enjoy the warm microclimate and the sandy soils at the Seehof. There, the grapes achieve optimum maturity. Dark and rich ruby in colour, this elegant wine has delicate aromas of raspberry and currant, with hints of cedar, chocolate, and peppery spice. Fine-grained tannins support the fullness of the fruit for a wonderful balance. The finish is long and persistent.

Manual harvesting and selection of the grapes from the historic vineyard. After destemming, the stainless steel tanks are filled by gravity, followed by mash fermentation under controlled temperature. After malolactic fermentation in steel barrels, the wine ages for 12 months in barriques (30% new barriques). Assemblage is performed 2 to 3 months before bottling, followed by at least another 12 months of bottle ageing.

Kaltern, Seehof: 230-280 m above sea level, steep slope in the immediate vicinity of Lake Kaltern, deep, humus-rich, sandy clay soil on calcareous gravel

Ideal with grilled and roasted meat dishes, venison stew, lamb and game dishes, and mild cheese.
