Our promise for generations

At Castel Sallegg, we think in terms of generations, not moments. For centuries, we have been preserving not only our vineyards, but also historic walls, living cultural landscapes and valuable forests that purify our air and protect the future. Sustainability is not a trend, but our heritage - a promise to nature, to our guests and to future generations. That is why we focus on innovation and are the first in South Tyrol/Alto Adige to set new standards - out of conviction and with a view to tomorrow.

A liaison of form and function: Our wine bottle

Sustainability in wine cultivation begins with the wine bottle. Most of the CO2 emissions are attributable to the bottle cap. As pioneers in northern Italy, we have been using a special wine bottle since 2022. It represents the perfect blend of bottle design, reduced bottle weight, and innovative material: 100% post-consumer recycled glass (PCR). An important step in respecting nature. Elegant, refined, and exclusive – the new wine bottles reflect the character of the wine they contain.

Warmth from nature and innovation

Castel Sallegg combines innovation and sustainability: with a bioreactor for compost thermal energy at the Leisenhof estate, we use biomass from our agriculture, such as grape combs and woody plant parts, to generate sustainable heat for our Vineria wine bar, guest rooms, the pool and the sauna. The resulting compost is also used for the gentle care of our vineyards. As the first process of its kind in South Tyrol/Alto Adige, it sets a clear signal for environmental protection and the highest quality - for wines that inspire and unique experiences in harmony with nature.

The Compost di Vino project was developed in collaboration with Biologik Systems, Eurac Research, the Free University of Bozen-Bolzano, Laimburg, and the South Tyrolean Farmers' Association (Südtiroler Bauernbund), and can be visited upon request.

At the Hotel 2025 trade fair in Bolzano, Castel Sallegg was honored with the Hotel Sustainability Award in the "Better Together" category. The jury recognized Castel Sallegg as an example of how sustainability can be experienced in the hospitality sector. The interplay of research, viticulture, and hospitality creates a place at Leisenhof where innovation and tradition come together. The future begins where people act together.
